Recipe : Rainbow cake

Assalamualaikum,

My sister and I made this cake about more than a month ago but I forgot to share the recipe. I did promise someone (soo sorry K.Dila) to post up an entry on the cake recipe.

The original recipe is perfect for 5 inch cake pans - you could afford for 6 colours with this size of pan. We used 6.5 inch cake pan. Thus it explained the 4-colour layers. Well.. Here it goes.



Ingredients;

2 1/4 cups of cake flour
1 tablespoon of baking powder
1/2 teaspoon of salt (ignore if you use salted butter)
1 1/4 cups buttermilk (we used yogurt)
4 large egg whites
1 1/2 cups of sugar
2 teaspoon grated lemon zest
125 gm unsalted butter
1/2 teaspoon of pure lemon extract
Food colouring (colours of your choice)
2 teaspoon vanilla essence
Vanilla cream cheese frosting

How it's done

1. Preheat oven to 180°C. Line your cake pans - use more than 1 cake pan to save time.
2. Sift the flour, baking powder and salt together in a bowl. Set aside.
3. In another bowl, whisk egg whites with buttermilk.
4. By using electric mixer with medium speed, beat the butter and sugar in a separate bowl until light and fluffy. Add the lemon extract and lemon zest.
5. Beat in half of the egg-buttermilk mixture and half of the flour mixture into electric mixer bowl. Then, beat in another half of the egg-buttermilk and flour mixture. Beat the entire batter on medium high speed for 2 minutes until it completely smooth.
6. Divide the batter evenly into 4 bowl ( or 6 if you're using 5 inch cake pans). Dye each batter with different colours.
7. Bake for 20 minutes or until the cake layer do not stick when it tested with toothpick.
8. Cool the cake layers on the wirerack. Top them with cream cheese frosting once they're completely cool.




Tips n tricks;

1. If you skip the lemon extract and lemon zest, your cake would still be perfect.
2. You may want to cut down the sugar. I only put 1 cup of sugar.
3. Wrap the cake immediately once it cools down and keep them chill to ensure moistness.
4. Decorate your cake creatively :)

Recipe : red velvet cupcakes with vanilla cream cheese frosting

Assalamualaikum,

The recipe is from chanteksekali bakery owner. An excellent recipe I'd say. This is the 3rd time I'm baking red velvet with this recipe. It tasted marvellous and addicting. Hehe. You'll find the recipe is simple and easy to follow.

Ingredients
2 1/2 cups of flour (I used blue key cake flour)
1/2 cup of cocoa powder
1 teaspoon of salt (ignore if u use salted butter)
1 cup of unsalted butter
2 cups of sugar
4 eggs
1 cup of sour cream ( I used natural yogurt)
1/2 cup of milk (I used low fat Dutch Lady milk)
1 bottle of red food colouring (I only used 1/2 bottle)
2 teaspoon of pure vanilla extract (I used vanilla essence)
Vanilla cream cheese frosting for topping



Methods

1. Preheat oven to 350°F or 180°C. Sif the flour, cocoa powder, baking soda and salt in a bowl. Put aside.

2. Beat butter and sugar in a large bowl by using electric mixer with medium speed until the mixture becomes light and fluffy.

3. Beat in eggs, one at a time.

4. Mix in the sour cream (yogurt), milk, red colouring and vanilla extract.

5. Beat in the flour mixture with low speed. Do not overbeat.

6. Spoon the mixture in 30 paper-lined cups until it fills 2/3 of the cup.

7. Bake for 20 minutes or until it does not stick to toothpick.

8. Take out from the oven and cool on wirerack.

9. Add the topping on top of it once the cupcakes are fully cooled.





Recipe for vanilla cream cheese frosting;

Beat 1 package (8 oz) of cream cheese, 1/4 cup butter, 2 tablespoon of yogurt and 2 teaspoon of vanilla extract until light and fluffy. Beat in 1/2 cup of confectioner sugar.

Tips:
1. Always let your butter and cream cheese softened before beat them in a bowl. This is to avoid unfairness of the mixture.

2. You can always modify the sugar amount to suit your sweetness level.

3. If you prefer some sour taste in your topping, I would suggest you to add some lime or lemon zest (or juice) into the cream cheese frosting.

4. Leave me some feedback once you have your own version of red velvet!

Roasted potato with veggies and prawn

Assalamualaikum,

Semalam aku ade belek2 buku recipe yg bos aku hadiahkan ms aku kawin hr tu. Then terpandang lah pada veggie salad yg sgt tempting ni. Tekak terasa nak. Perot cakap nak nak nak! Misi mencari bahan2 bermula lepas keje td. So, bahan2 yg aku perlu ada ialah;

Ubi kentang
Udang
Tomato
Brocoli
Carrot
Sos thousand island
Garam
Air

The best way utk masak kentang ialah dgn cara roast dlm oven. Oleh sbb oven aku baru je meletup waktu maghrib td (seriously happen, dia meletup sambil bunyi 'pang!' dgn sgt kuat) jadi aku terpaksa rebus ubi aku dengan carrot yg dh dipotong2 ikut selera aku. Ambek sedikit ms utk rebus ubi dgn carrot sbb dorg ni pesen sayur keras kan. Sambil2 tu boleh bersihkan udang.

Elok2 timing udang siap dibersihkan, ubi kentang dgn carrot dh cukup empuk. Keluarkan dan masukkan udang. Udang kjp je. Jgn lame2 sgt. X sedap. Nmpk dh masak sket, terus tutup api. Biar kjp dlm periuk then terus angkat. Lepas tu potong tomato. Udang, ubi dgn carrot td aku gaulkan dgn garam. Ok, sbb ape dh masak baru gaul garam? Sbb aku baru je dpt 2 paket garam beriodin free. Guna jelah. Org yg faham, fahamlah. X faham sudah. Korg kalo nk garam2 kan sket, patut letak garam waktu rebus ubi dgn ketang tu.



Orait, mengapakah dlm pinggan aku xde benda hijau yg dipanggil brocoli tu? Ms kt mart td, brocoli xde. Jd aku x letak. Kalo ade, letaklah. Stim atau rebus kjp je. Lame2 x sedap. Seme bahan2 td, gaulkan dgn sos thousand island. Aku rasa meal aku ni x berapa fun. Jd aku tambahkn elemen fun sket. Buka freezer, capai fries gemuk, goreng! Sambil2 tu, salad td aku letak dlm pinggan. Taruk sos cili dgn cheezy sos sket. Angkat fries kasi join dlm pinggan. Terangkat jugak beb! Udang rasa manis. Kentang dgn carrot cukup masak. Fries gemuk pon sedap. Alhamdulillah, tercapai hasrat.

Korang, try lah! Kalau ade penambahbaikan share dgn aku tahu!

Oreo Cake dengan Oreo Buttercream

Assalamualaikum,

Semalam, adik I buat kek - Oreo cake. Teringin sangat katanya lepas tengok iklan ice cream cake dari Baskin Robin tu. Cuma, versi yang adik I buat ni, bukan ice cream cake. 

Jom tengok apa bahan-bahan yang adik I guna untuk buat kek ni;

1 cawan butter
1 cawan fresh milk
2 sudu teh esen vanila
2 cawan tepung serba guna
2 biji telur putih
1 sudu teh baking powder
1 cawan gula
8 keping Oreo cookies
secubit garam
(untuk fresh milk tu, adik I guna Dutchlady saja)

Ayam paprik ala thai

Assalamualaikum,

angle kurang bagus -.-
Beberapa hari lepas, adik I requested nak makan paprik. I lagi prefer paprik daging sebenarnya. Tapi, disebabkan malas nak keluar beli daging, makanya I masak paprik ayam.

Bahan-bahan:

Bahan kisar;
2 batang serai
6 ulas bawang putih
cili burung (ikut selera pedas masing2)
1 sudu kecil lada hitam 
4 hiris lengkuas
sedikit kunyit hidup

Kitchen : Triple Chocolate Brownies

Assalamualaikum,

The first time ever tried to bake my brownies, I'd like to say, the outcome wasn't pleasant. *sigh* Maybe because I used margarine instead of butter - as I was so lazy to go out for shopping, my brownies were a bit oily.  

So folks, here are the ingredients;

275g plain chocolate
275g butter
85g milk chocolate
85g dark chocolate
175g plain flour, sieve
1tsp baking powder
4 large eggs, lightly beaten
85g nuts (pecans, hazels, cashews), broken into pieces
1 tsp vanilla essence
325g caster sugar

Segmen dapur : Kerapu stim

Assalamualaikum,

Dah lama rasenye aku x share resipi memasak kat sini. Asyik share baking recipes je, bosan jugak, iya dak? Sebagai serirumah yang talented, aku fikir, ade baiknya aku share resipi ni dengan kome2 semua. Kot ada yg nak terai ke, kan? Kalau kome tanya kenapa kerapu ni aku stim, aku akan jawab; sebab semalam aku dah masak kerapu 3 rasa, xkan hari2 nak masak 3 rasa? 


Bahan2 yang diperlukan;

2 ekor ikan kerapu (saiz sederhana besar)
3 sudu minyak jagung (utk menumis)
4 ulas bawang putih (diketuk)
1 biji tomato (dipotong dadu / cincang)
1 biji limau nipis
Cili padi (bergantung kpd tahap pedas yg dikehendaki)
2 sudu besar sos tiram
2 batang serai (dititip)
2 helai daun limau purut
3 sudu besar kicap cair
1 inci halia (dihiris nipis)
1 1/2 cawan air
1 keping nenas sederhana tebal (di potong dadu)
Garam (jika perlu)
Sedikit daun sup

Kaedah;

  1. Bersihkan ikan kerapu. Gunakan 1/2 dari limau nipis utk rendamkan ikan kerapu - tujuan : hilangkan bau hanyir ikan.
  2. Tumis bawang putih, tomato, halia dan cili padi sehingga naik bau. Masukkan sos tiram dan kicap cair. Kacau sebentar, kemudian masukkan air. 
  3. Perahkan baki limau nipis ke dalam kuali. Masukkan serai. Sebelum matikan api dapur, pastikan kome rasa dulu kuah ikan ni. Kalau tak cukup masin, taruk la garam sket.
  4. Panaskan steamer kome. Bilas ikan kerapu tadi. Letakkan ikan tu dalam bekas yg tahan panas di dalam steamer.
  5. Curahkan kuah yg ditumis tadi ke dalam bekas ikan. Stim selama 15 minit.
  6. Selepas 10 minit, masukkan nenas, sambung stim balik. 
  7. Hidangkan di dalam bekas. Tabur sedikit daun sup yg telah dimayang halus ke atasnya. 
Dah pon siap ikan stim kome. Oke, kalo kome perasan, kt bahan2 tu, ade bahan yg aku highlight dgn kaler ijo. Bahan2 tu jenis acidic @ masam. Tomato dgn limau nipis dah masam, kenapa nak tambah nenas lg, kan? Xnak letak nenas pon, suke hati kome la. Bagi aku, nenas tu, rasa masam dia lain macam sket sedapnya. Haha. Kalo terus letak nenas tu awal2, nnti by 15 minutes, nenas tu lembik sgt. X berapa sedap tekak aku nak makan. Kehkeh. 

Kalo suke kuah lebih, pon boleh. Kome kne la tambah air dgn bahan perasa lebih sket (kicap cair atau garam). Ikut suke kome la nak buat macam mane pon. Kome jugak yg nak makan nanti, kan? Itu saje lah dari aku. Kome cuba nanti, share la dgn aku, macam mane rasenye. Hehe.

Carrot Cake dengan Cream Cheese Frosting

Assalamualaikum,

I baked a carrot cake two days ago. First time I buat carrot cake. Before ni pernah. Pernah makan je :P Well, obviously I xde my own recipe. So, I intai-intai la kt google utk cari recipe yg suit my taste. It turned out, banyak teramat recipe carrot cake yg ada. I pilih recipe yg I rase seswai je. I mean, nama carrot cake, tapi kenapa nak kena letak nenas and pisang? Dah mcm mixed fruit cake pulak kan. I meant no harm. Kalo you guys suka carrot cake yg mcm tu, be my guest.

Blueberry Cheese Cake - bukan secret recipe

Assalamualaikum,

Pertamanya, I nk ucapkan selamat menyambut awal muharam kepada semua umat Islam 1Dunia. Semoga, dgn izin Allah, kita semua akan dikurniakan rezeki yg halal dan lebih dari tahun-tahun sebelumnya :)

Dah lame rasenye I x share recipe dgn u-ols, kan? Maklumlah.. I segan tahu. Bukan pandai masak or baking sgt pon. Tiba2 nk feeling share recipe bagai, kan? I ni, amatur cook je. Masak bagi kenyang perut mak ayah boleh la. 

Berminggu-minggu jugak la I ngidam nk makan cheese cake. Cheese cake buatan sendiri oke, bukan secret recipe ke, bakery ke. Tp asek tertunda2 je sbb susah nk dpt bahan. Ye lah u-ols, I ni duk kt kampung hokay. Xkan nk toreh cheese kat pokok getah pulak. So, terpaksa la I bersabar sket utk collect bahan2 tu. Bila dah dpt semuanya, I decide nak buat Blueberry Cheese Cake. Ouh, kalo ade vanilla sket, name dia jadi Vanilla Blueberry Cheese Cake? Eh, kalo bake, jadi Vanilla Blueberry Baked Cheese Cake? X kesa la nama ape2 pon u-ols. Yg penting, ade main ingredients, ade blueberry.

From my kitchen : Red Velvet Cake

Assalamualaikum,

I haven't write here like ages, right! Hukhuk. Sorry for that -.- Few days ago, I was so determined to baking and decided to make red velvet cake - instead of red velvet cupcakes, with cream cheese frosting. I am so not great with baking but I really really wanted to try this cake on my own, for like weeks but didn't manage to find the suitable time due to the busy world of school placement. Dear my lovely readers, I'll share the recipe here and hopefully you guys will try it someday! :)

Ingredients:

parts of the ingredients
CAKE
250g cake flour (or plain flour)
pinch of salt
1 teaspoon baking soda
2 teaspoons cocoa powder
2tablespoons red colouring
2 large eggs
1 teaspoon vanilla extract
240ml buttermilk
1 teaspoon white distilled vinegar
113g unsalted butter
300g granulated sugar

CREAM CHEESE FROSTING
1-8 ounce (227g) cream cheese
1-8 ounce (227g) tub Mascarpone cheese
1 teaspoon vanilla extract
115g icing sugar
240ml double cream

Methods:

1. Preheat oven to 350 F (160 C). Grease and four the baking pan(s). Remove excess flour. (You can use 2 baking pans if you prefer to make 2 layers cake, but I only use 1 pan).


2. Mix flour, baking soda and salt in a bowl. 


3. Put buttermilk, vinegar, vanilla extract and eggs into separate bowl. Whisk them together.


4. In a small bowl, whisk the cocoa powder and red colouring. 


5. In the electric mixer bowl, put butter and sugar together. Mix them with medium speed until the mixture becomes fluffy.

6. Take 1/3 of the flour mixture and 1/2 of the buttermilk mixture and add them into the electric mixer bowl. Whisk the mixture together.

7. While mixing, slowly add the remaining buttermilk mixture and flour mixture in the bowl in medium high speed.


8. Add colouring mixture and mix for 30 seconds or until well-mixed.

9. Pour into pan and bake for 25 to 30 minutes. (May need more time - do not forget to check your cake after 25 minutes)

10. Let the cake cool before starting to put on the cream cheese frosting. 

Next thing, how to make the cream cheese frosting? It was my very first time trying to make the frosting, and I could say it was not a great success. I mistakenly bought cottage cheese instead of cream cheese. Well, blame me for not knowing what cream cheese a.k.a soft cheese, were even I have used them before. To not let the same thing happen again, I'll definitely buy Philadelphia cheese for my next attempt! :D

Frosting;
1. Beat cream cheese and mascarpone cheese until smooth.
2. Add vanilla extract and icing sugar. Beat until smooth.
3. Add double cream and mix the mixture until it looked 'heavy'.
4. Add more icing sugar or cream as needed.

Then, you can spread the frosting on the cake or in between the 2 layers, if you want. Again, I am totally not an experienced baking chef, so my frosting was not good looking at all. 

It tasted quite nice. My house mate loves it!

Segmen dapur : my peach cobbler

Assalamualaikum,

Have you ever heard of Hlovate? She's (I think Hlovate is female) a novel writer and a great story teller. I've been reading her works since few years back, and love it so much. I haven't heard of (and don't even have a clue) peach cobbler, until I found it in her novel. So, I searched for the recipe and how it looks like. Out of all recipes I found, I think, this is the simple one. This is my first time trying peach cobbler recipe. Totally no idea how it tastes like. Anyway, I'll share the ingredients and 4 easy steps for you! Here it goes.

Ingredients
1/2 cup of unsalted butter
1 cup all-purpose flour (I used plain flour)
2 cups sugar, divided
1 tsp baking powder
pinch of salt
1 cup milk (whole or semi-skimmed, doesn't matter)
4 cups fresh peach slices
1 tsp lemon juice
ground cinnamon, ground nutmeg (optional)
water (if needed)

Preparations
1. Preheat the oven to 375 degrees. Melt butter in 13x9-inc baking dish. (I used 6.5x10-inch baking dish and small cup)


2. Mix 1 cup of sugar, peaches and lemon juice in the saucepan. Boil over with high heat and keep stirring them. Look at the peaches texture. You might want to add 1/4 cup of water if it's too dry. Pour batter over batter in the baking dish. Do not stir.

3. Combine flour, the remaining 1 cup of sugar, baking powder, ground cinnamon, nutmeg and salt. Add milk and stir until the dry ingredients are moistened. Pour batter over batter on top of the peach mixture. Do not stir.

4. Bake for 40-45 minutes until it become golden brown. 

Simple, isn't it? It best serves hot with cold vanilla ice cream. Yeah, yeah, vanilla ice cream is always the best to go with your dessert. 

You can always alternatively;
- use the canned peaches
- sprinkle the ground cinnamon on top of the flour mixture if you didn't add it in the mixture
- use larger baking dish with large cup (so the measurement suit the size of the dish)

So, what are you waiting for? Try it on your own for the taste! While I writing this, the peach cobbler is still in the oven. Sorry to disappoint you for the outcome. Segmen dapur : my tiramisu

Salam,

Apa kabar semua? Chef harap para penonton semua sehat *wink sket kt camera man* Oke, hari ni chef nk ajar penonton semua mcm mane nk buat tiramisu. Resipi ni simple je taw. Kalo ibu2 duk sibuk masak main course kat dapur tu, anak2 boleh tolong buat dessert, kan? Resipi yg chef nk bagi ni, mmg simple je. Anak2 pon boleh buat. So, ape bahan2 nya?


soft cheese - chef guna tesco brand je
double cream - tesco brand jugak
esen vanila
sponge fingers
serbuk nescafe/coffee
gula
air panas
serbuk koko - chef guna maltesers sbb xde serbuk koko
chocolate bar - kalau nak

Mcm mana pulak nak sediakan? Senang je.

1. Bancuh air nescafe/coffee ikut selera penonton semua. Kalau x suka rasa nescafe yg berlebihan, letak sket je la serbuk nescafe tu. 
2. Masukkan soft cheese, esen vanila dgn double cream dlm mixing bowl. Pukul hingga kembang.

3. Celupkan sponge fingers ke dalam air nescafe yg dibancuh td. Jgn celup lame sgt, nanti sponge finger tu jadi terlalu lembik. Kemudian, susunkan dalam bekas yg sesuai. Atau pun, penonton boleh susunkan sponge fingers dalam bekas dahulu, kemudian tuangkan air nescafe td sedikit demi sedikit atas susunan sponge fingers. Pastikan jumlah air tidak berlebihan.

4. Tuangkan adunan dari langkah 2 td di atas susunan sponge fingers dan ratakan. Ketebalan adunan cream tu bergantung pada penonton sendiri. Tak perlu tebal sangat, nanti tak sedap :) Siap lapisan pertama.

5. Ulang langkah 3 dan 4. Jika bekas yang penonton guna tebal/tinggi, boleh ulang lg sekali. Tgk keperluan. Kalau perlu, boleh buat. Biasanya, chef buat 2 layers je.

6. Parutkan chocolate bar td di atas top layer tiramisu anda. Boleh jugak guna dark/white chocolate. Ikut selera masing2. Chef guna Milka choc bar je. Heee..

Dah siap pon. Ni lah dia tiramisu yg chef dah buat! Belum sempat rasa lagi, sbb baru lepas buka puasa. Masih kenyang. Lagipon, biar dia sejuk sket. Ouh ya. Lupa pulak. Lepas dah siapkan, boleh masukkan dalam fridge selama lebih kurang 2 jam utk disejukkan - dlm masa yg ms utk pastikan sponge fingers td serap lebihan air. Senang x, nak buat? X perlu baking2 pon kan? Chef blajar buat tiramisu ni, dari kawan. Dah lame dah. Ada beberapa resipi lain lagi utk buat tiramisu. Cume yg ni version yg chef blajar dari kwn + video. 


Jenis2 soft chesee yg penonton boleh guna;
1. philadephia cheese 
2. mascarpone cheese

Antara version lain cara penyediaan tiramisu mcm dalam video kat bawah ni. So, penonton boleh tgk, dan compare dgn cara yg chef buat. Chef x ambek hati pon kalo penonton x ikut cara chef. Selamat mencuba! ^____^
